Here is the star recipe of the month. Valentine special!
CHOCOLATE MARSIPAN HEARTS: Makes 20. Preheat oven at 200 celcius/ 400 farenhiet/ gas mark 6
These might look like plain cookies but they have a secret marzipan filling.
INGREDIENTS:
200g/8 ounces of self raising flower, sifted
50g/2 ounces of cocoa powder, sifted
150g/6 ounces of chilled butter
100g/ 4 ounces of caster sugar
2 egg yolks
200g/8 ounces of marzipan
METHOD:
Put the flour and cocoa powder into a large bowl and cut the butter into chunks and put that in as well. Stir it and rub the butter between your fingers to make it look like dark breadcrumbs. Now put in the sugar and the egg yolks. Stir the mix into a dough and shape it into a ball. wrap it in cling film or sellophane and leave it in the fridge for 30 minutes. Whilst you wait, you can get started with the marzipan. Lay some extra icing sugar or flour and roll out the marzipan. Cut out as much as you can but don't get stingy or you either can't taste it or break it. By now the dough should be ready. Take it out and roll it, squeeze together the crumbling parts and cut out DOUBLE the amount of marzipan hearts you have. You can put half the chocolate hearts on a baking tray now, then put on the marzipan hearts and finally put on the last chocolate hearts. Squeeze the edges of the two chocolate hearts together to enclose the marzipan. Bake them for 10 minutes and leave them to cool. Dust them with icing sugar or cocoa powder if you want.
